Japanese cuisine is not limited to sushi or ramen, it is unique amalgamation of global flavor palettes. Today, I’d like to share the recipe of Japanese coroquette that is more commonly eaten at Japanese dinner table than typical choices of rolls and teriyaki.
Try this at home and you will be amazed!

I want to highlight this recipe is something very special to me, because this is my favorite dish that my mom cooked when I was growing up in Guam. It is simple but filled with love that cannot be duplicated. I’d like to call this “Haga-style” Coroquette.

(Serving size: 5-6)

[Group A]

  • 3 potatoes peeled and diced to about 1-cubic inch.

  • coconut oil.
  • 1lb of ground meat (pork is best but can be anything).
  • 1/2 thinly minced onion.
  • 2 pieces of minced garlic.

[Group C]

  • 2 eggs.
  • flour.
  • 1/2 lb of panko (bread crumbs).

[Group D]

  • olive oil.
  • tiny bit of minced garlic.
  • thinly sliced dried prune.

  • bay leaf.

[Group E]

  • Canola oil or vegetable oil for frying coroquette.


+ R E C I P E +

001003Step1. Boil the water in large pot and cook the potatoes until it softens. Remove the pan from heat and drain water. Add salt, pepper, and 1/2 teaspoon of powdered bouillon and mash them up.

002Step2. Prepare the content of coroquette. Let’s heat the frying pan with a drop of coconut oil (this could be butter or olive oil as well) and stir fry the ingredients listed in Group B.

004Step3. Once all the meats and onion bits are thoroughly cooked, mix them with mashed potatoes +1 tablespoon of flour and continue mashing on.

005Step4. Prepare flour, beat eggs, and panko in separate containers. Shape the coroquette with hands (tip: make it flat and firm with hands so it retains the shape in the frying pot). Dip the coroquette into flour bed→egg→panko. In that exact order 🙂

007Step5. Heat about 3-4 cups of oil in pot. Gently place coroquettes into the oil and fry it until it turns to light brown. Make sure to flip both sides to cook evenly.

006Step6. The last step is to make the sauce. Heat the frying pan used in Step2 on low-heat and add the ingredients in Group D in the order of appearance.

材料
(5~6人分)

[Aグループ]

  • 2センチ角位に刻んだジャガイモ3つ。
  • 塩コショウ。
  • 中華味の素(ウェイパーなど)。
  • 小麦粉大さじ1

[Bグループ]

  • ココナッツオイル大さじ1(バターかオリーブオイルでも可)。
  • 豚挽き肉400g(牛肉や鶏肉でも良い)。
  • みじん切りにしたたまねぎ半一個。
  • みじん切りにしたニンニク二欠。
  • 塩コショウ。
  • カレー粉末少々。
  • 醤油少々。
  • 砂糖少々。

[Cグループ]

  • 卵二つ。
  • 小麦粉。
  • パン粉300g。

[Dグループ]

  • オリーブオイル。
  • ニンニク一欠。
  • 刻んだドライ・プルーン一つ。
  • バルサミコ。
  • 蜂蜜。
  • ローリエの葉っぱ一枚。

[Eグループ]

  • 野菜油。


レシピ

0010031.中くらいの鍋に水を張り沸騰させます。泡が出始めたら刻んだジャガイモを投入して、よく火が通るまで煮ます。水を捨て塩コショウと中華味の素と一緒に潰してマッシュポテトにします。

0022.マッシュポテトを冷ましている間にコロッケの中身を作ります。フライパンにココナッツオイルを熱し、Bグループの材料を火が完全に通るまで炒めます。

0043.炒めた肉を火から下ろし、マッシュポテトに加えて大さじ一の小麦粉と一緒にさらに混ぜ合わせます。

0054.小麦粉、溶き卵、パン粉をそれぞれ別の容器に準備しておきます。コロッケをこぶし一握りぐらいの大きさにこねて形にし、小麦粉→溶き卵→パン粉の順番に浸していきます。

0075.鍋に油を張って熱します。溶き卵のしずくを垂らしてジュワっと油の表面に浮き上がるくらいが丁度いい熱さです。コロッケを一つずつ丁寧に油に泳がせ、取り箸などでひっくり返しながら両面がきつね色になるまで揚げます。

0066.最後にコロッケのソースを作ります。肉を炒めるのに使ったフライパンを再び弱火に掛けオリーブオイルでニンニクを炒めます。Dグループの残りの材料を熱して最後にローリエの葉っぱで香りを加えれば完成。

I moved to San Francisco about 3 years ago from LA via London, and at that point my ideal housing situation was pretty clear in my mind: A neighborhood that is accessible to the city by train or bus and still has a quiet ambience with its own charm enveloped within. Outer Sunset District, where I’ve been living since day one in SF, has been strangely comfortable.

Grand View Park which is located at Moraga Street/15th Avenue is one of the most beautiful parks to run/hike to enjoy sunrise and sunset. To add another insight on good eat in Sunset, it’s worth mentioning that Devil’s Teeth Baking Company out in Noriega Street between 45th & 46th Streets has hands down the BEST breakfast sandwich in town. See? Sunset has the best places to sip and eat very well!

 3. Beach and Bonfire!

Sunset District is essentially a beach town. If you live west of 19th Avenue you are in walking distance to Ocean Beach. Who doesn’t like summer days out on the wide open beach with sunshine?

At night, you can also set up bonfire and hold small acoustic guitar session with good friends around the fire permitted area. While you’re here, also stop by Java Beach Cafe on Judah Street for sandwiches, salads, and regularly scheduled music + poetry events.

4. Free Music Festival

In the summer, you can attend totally FREE music festival at beautiful Sigmund Stern Recreation Grove. Every year, Stern Grove Music Festival invites amazing musicians and performers from around the world to bring high quality entertainment to the city.

5. Awesome farmers market every Sunday.

Sunset District has several good produce markets such as Andronico’s Market, Noriega Produce, and of course Trader Joe’s but on top of that, we even have a weekly farmers market that provides wonderful opportunity to buy organic and locally grown fresh produce from farms all around California.

Stonestown Farmers Market takes place every Sunday from 9am to 1pm at the parking lot behind Macy’s. The market event usually has food trucks, playhouse for kids, and music performance. It’s really a good place to spend the Sunday morning and get some fresh veggies and fruits from the hands of makers.

Living in the most expensive city in the US can become challenge for new transplants and locals alike, but knowing the surrounding and quality of living experience is important to find the perfect home. After living in Sunset District for a while, I have certain inconvenience like not being in the immediate center of city but there are many great factors that justify the reason of living here.

#004 – Cooking: Chicken Cordon Bleu

Today, I’d like to share the world some easy cooking recipe.

Chicken Cordon Bleu (2-3 serving)

Ingredients:
– 1lb chicken breast.
– flour.
– bread crumbs (panko).
– 2 eggs.
– cheese (I use Monterey jack).
– ham (I use Canadian bacon).
– toothpicks to hold the stuffing together.
– salt & pepper.
– butter.
– canola oil.
– tomato sauce (I used traditional marinara from Trader Joe’s ®)

– vegetables for stir fry (side dish).

STEP 1: Prepare the Chicken Cordon Bleu.
Slice open chicken breasts into flat sheets like yoga mats. Dice up cheese and hams into considerable size to wrap them up in the chicken sheets—* Wrap wrap wrap*—like how I am doing in the video.

Once the chicken/cheese/hams are rolled up, hold them together with toothpicks (otherwise they will rebel against you and fall apart during the proceeding steps). Garnish the chickens with salt, pepper, and flour and dunk ‘em into beaten eggs. Yeah, that’s right… dressed them well in nice yellow layer!
Finally, powder the chickens with bread crumbs (panko) and you are done with the trickiest part of cooking!001

STEP 2: Cooking the Chicken Cordon Bleu.
Heat the frying pan and melt butter and canola oil. Grill the chickens until both sides are brown. If you use the lid over the pan the chickens will get grilled thoroughly and quicker.
Preheat the oven to 325F and stick the chickens into the oven to bake the cheese and meats thoroughly. Estimate baking time is 25-30minutes depending on how well the content is heated. Use knife or food thermometer to check when the chicken is ready. That’s pretty much it for the main dish!

STEP 3: Prepare the tomato sauce and vegetable stir fries.
While the chickens are in the oven, let’s prepare the tomato sauce and vegetable stir fries for side. 004003
I used Trader Giotto’s Traditional Marinara Sauce which has everything essential to Italian cuisine aside from tomatoes (basil, oregano, garlic). Put a small cube of butter in small sauce pan and heat the sauce *low heat* with bits of cut dried plums and Worcester sauce.
While the sauce slowly sizzles, reheat the frying pan that you used to grill the chicken earlier and stir fry vegetables (I used green peas, zucchini, and minced garlic in the video).

Here’s how the finished dish looks like:

BONUS:  If you want more carbs I recommend dicing up sweet potatoes (Japanese satsuma yam) and boil them in water with small amount of salt and coconut oil. This is very friendly match to Poached Egg Quest style Cordon Bleu. [end]

チキン・コルドン・ブルー(2~3人分)

材料:
鳥胸肉(400g)
小麦粉
パン粉
卵(2つ)
スライスチーズ(お好みで)
ハム
爪楊枝
塩コショウ
バター
野菜油
トマトソース(Trader Joe’s ® のTraditional Marinara が簡単でおすすめです)

付け合せで野菜炒め用の青野菜とサツマイモ

STEP 1: 下ごしらえ
鳥胸肉を包丁で薄く開きます。全体の厚さは1cmくらいが理想的です。
適量のスライスチーズとハムを鶏肉に包みこみ、形が崩れないように爪楊枝で押さえてあげます。塩コショウと小麦粉をまぶして溶き卵に浸し、パン粉を全体にまんべんなくまぶしたら準備完了です。001

STEP 2: 調理方法
フライパンにバターと野菜油を熱して、STEP 1で準備した鶏肉を両面がこんがりと茶色くなるまで焼きます。フライパンを覆える蓋のような道具があれば、全体に火が届きやすく調理時間も削減できるのでおすすめです。鶏肉にしっかりと火が通るまで焼いてください。
オーブンを160℃(325F)に暖めておき、中のチーズがとろとろになるまで鶏肉をさらに加熱します。加熱時間は25分から30分くらい。ナイフや温度計で焼き具合をみながらじっくりと調理してあげてください。

STEP 3: トマトソースと添え物の準備
上の段階で鶏肉をオーブンで温めている間に今度はトマトソースと付け合せの野菜炒めの調理を行いましょう。トマトソースはTrader Joe’s ® で売っているTrader Giotto’s Traditional Marinara Sauceが即席で作るには一番簡単なのでおすすめです。基本的に市販されているパスタソースなどにはトマトとバジルとオレガノが入っているので何でもオーケーです。僕のちょっとしたアレンジとしてはこのソースにバター少量とウスターソース、刻んだ干しプラムを加えて弱火で煮詰めます。このソースをオーブンで焼き上げたチキン・コルドン・ブルー(そうこの時点で鶏肉はもう美しいコルドン・ブルーに変身していることでしょう)にたっぷりかけて召し上がってください。004003

野菜炒めは最初に鶏肉を焼くのに使ったフライパンに残った肉汁と一緒にニンニクとインゲンやズッキーニといった青野菜を強火で炒めるだけです。
